oooh the pinenut/caramel tart was nice. It reminds me of Rudy Guerero =) hehhe. It was a nice wintery sweet ending. What is this variation?
reminds me of cracker jacks at the baseball game... caramel nuts and popcorn... what was your influence... i like
so, here is my multiple replies...
1.)yes, it is popcorn, flavored with truffle salt, and caramelized truffle honey.
2.)it is a caramel-pine nut tart, with truffled honeyed popcorn, pears, honey croquant and olive oil gelato
3.) This variation Rho is not a variation, yet the original.
4.) Cracker Jacks are some of the flavor profile but with an Italian infusion. The influence was a rustic Italian tart I savored while in Tuscany and brought to reality based on the season at the time (winter) and use of loccal fruits and flavors.
